Yeast Selection:

21g Uvaferm 43

37.1g Fermaid-O

26.3g Go-Ferm

526 ml water

1.155 SG / 35.3 Brix

1/3 sugar break = 1.101

1.050 Estimated FG


Honey Selection:

28 lbs Meadowfoam Honey


Add your honey into a bucket and top off with enough water needed to reach the starting gravity listed above.


Follow the Yeast Handling and Nutrient Addition process on MMR.


After fermentation is complete, add the following to your must (preferably in a mesh bag):

- 3 lbs cocoa nibs

- 5 vanilla beans cut open lengthwise

- 5 lbs of graham crackers (in separate bag)


Allow to sit for 14-21 days before racking into a new vessel.
